Aside from the human voice they are the ones that have the biggest possibilities to vary their sound, with everything from how they press the string, how they handle the vibratos, how fast, how hard and in what angle they use the bow, and where on the strings they stroke it. It's totally fascinating, and it can have a real turbo-effect on the emotional output of a song! The arrangements of the string parts and writing them down as sheet music that's needed for the recording is an art in itself, and sometimes people can need help with that craft. That's where I come in. I'm a trained classical pianist with a Master's degree from Royal College of Music in Stockholm. Besides that I've worked with, written and produced tons of pop music and I've also been an educator in Music Theory for a long time.
